Ewedusoup is a slimy vegetable soup prepared by the Yoruba's and it is known to have so many nutritional benefits. Ewedu soup has a greenish color with a slimy texture and it is often enjoyed with amala (ewedu with amala) topped with buka stewand sometimes with Gbegiri (bean soup). Some other people also know Ewedu soup as jute soup across Nigeria.

There are two methods of preparing ewedu, you can add ground melon seed (egusi) or make the soup with just ewedu leaves. Other name for ewedu leaf is Ayoyo, and the English names for ewedu are mallow leaves, Jute leaves, Saluyot, mulukhiyah, wild okra. Etc.

Traditionally, ewedu soup is prepared with edible potash (kaunwa) and very few spices are added, you can still prepare ewedu soup without patash if you love it the traditional way. However, you can customize the ingredient to your preferred taste. Ewedu soup is traditionally prepared with broom, a small bunch of broomsticks, known as ijabe is used to masheweduuntil it dissolves in the liquid and forms a light slimy soup, however, your blender can save you the stress it takes to do this repeatedly which is what I used for this delicious soup. Ewedu soup ingredients

  1. 1 bunch of ewedu leaves
  2. 1 table spoon ground crayfish
  3. 1 cup of beef stock
  4. 1 stock cube
  5. 1 teaspoon of locust beans (Iru)
  6. teaspoon cayenne pepper
  7. water

Steps on how to make ewedu soup

  1. Pluck ewedu leaves from the stem and pick from the stalks into a bowl.
  2. Wash ewedu leaves severally and rinse with clean water to get rid of sand and dirt.
  3. Place a wide pot on heat, add 2 cups of beef broth or plain water to the pot and bring to a boil.
  4. Add ewedu leaves and Iru (locust beans) to the boiling water leave soak until it becomes soft for 5 minutes.
  5. Remove the boiled ewedu and place in a blender and pulse for few minutes until it is smooth.
  6. Return the blended ewedu to the same pot of water you took it out and stir very well.
  7. Season with 1 stock cube, crayfish, pepper, and stir to combined. Cook for few minutes while stirring until the soup forms a viscous texture and starts to thicken nicely.
  8. Ewedu is cooked take it off heat and serve with buka stew alongside with amala.

7. Season with 1 stock cube, crayfish, pepper and stir to combined. Cook for few minutes while stirring until the soup forms a viscous texture and starts to thicken nicely.

8. Ewedu is cooked take it off heat and serve with buka stew alongside with amala.
