Chicken fried rice is a quick and easy recipe for any occasion, this is made using soy sauce, crispy tender rice, chunks of marinated chicken and colorful vegetables. It is a different version of fried rice and not like the popular Nigerian fried rice made with curry or turmeric. I love the look and taste of this rice. You might want to make this for this festive season and beyond. Chicken fried rice is by far better than the take out fried rice or restaurant type.

I have made different types of fried rice before just like this shrimp fried rice, Nigerian fried rice, but I just know I have fallen in love with this very chicken fried rice and will love to prepare it again and again.
Before I made this rice, I made sure I prepared all my ingredients and kept all in place, doing it this way makes it very easy to throw in everything into the pan at once and in no time the rice was ready to serve. Instead of using fresh rice, you can use day old rice or your usual white rice prepared for tomato stew. However, long grained white rice is ideal for this rice recipe, but you can easily switch over to cooked brown rice if that is what you have.

I had some fresh chicken at home in the fridge, I just seasoned and cooked it then shred into bigger chunks, it is the main ingredient for this chicken fried rice followed by the colourful vegetables. Ingredients for chicken fried rice

  • 1kg boneless chicken , seasoned and cooked
  • 2 cups of cooked rice
  • cup carrot, chopped
  • cup green peas
  • cup green beans, chopped
  • 1 cup sweet corn
  • 1 medium onion, chopped
  • 1 teaspoon thyme
  • 1 medium ginger, grated
  • 4 cloves of garlic, minced
  • 3 tablespoons soy sauce/oyster sauce
  • teaspoon cayenne pepper
  • 1 stick spring onion
  • Salt to taste

Steps on how to make chicken fried rice

  1. Season and cook your chicken until soft, shred the chicken into bigger chunks and fry it slighly in oil and set aside.
  2. Bring out your left over white rice from the fridge and leave to sit at room temperature. I used the chicken stock to cook the rice and then leave to cool for few hours.
  3. Prepare carrots, green beans, peas and spring onion and drain the sweet corn from the liquid and keep all aside.
  4. Place a pan or a wok on heat, rub some butter or oil, whisk the egg and add to it, use a spoon to break the egg apart and cook on medium flame.
  5. Push the egg to one side of the wok, add ginger, garlic, onions and saute for 2 minutes until fragrant. More oil could be added if the content looks dry.
  6. Add the mix vegetables and saute for 5 minutes or until they are soft, season with a table spoon of soy sauce, pepper flakes, thyme and stir in the egg to combine with the other ingredients. Cook for 2 minutes for the veggies to absorb the seasoning.
  7. Add the cooked white rice, season with 2 table spoons of soy sauce and stir properly until the rice is coated with the sauce and the vegetables.
  8. Bring in the chicken chunks and stir well. Garnish with chopped spring onion and cook for a minute.
  9. Your chicken fried rice is ready.
