Okay, I am sorry. I really don’t like making you hungry….
Why do i post these pictures and make it the first thing you see? I just want you to feel like making what you see. I want you to run into the kitchen. Lol!
This chicken stew makes it easy for me to run into the kitchen and whip up a “mean” stew without stressing out. Like, this is the stew i would make if you woke me up in the middle of the night to make a stew for some weird reason…
With my sleepy eyes (while grumbling of course), i’ll go to the kitchen, get the chicken and cut it up. Get my tomatoes, peppers and 0nion, cut them up roughly in anger… Chuck them in the blender while cussing under my breath

Put the vegetable oil in the pot, heat it (or not, it doesn’t really matter)! Then pour it all in; tomato blend, chicken, some salt here, garlic there, ginger here and some bay leaves.
I’ll leave it on medium heat, cover the pot, set my alarm for 50 minutes later and go back to sleep! Yep!
Once the alarm goes off, i’ll just come to check to be sure the stew is as thick as i want it, if it isn’t, i give it another 10 to 15 minutes and you have your stew…. So make your own rice and have some stew.

Ingredients
  • 4 Chicken Laps or Chicken Leg Quarters (Weighing a total of approx. 1.6kg)
  • 1 kg Fresh Tomatoes
  • 2 Large Onions (775 grams)
  • 2 Large Red Bell Peppers (365 grams)
  • 1 Large Green Bell Pepper (175 grams)
  • 2 Yellow Habaneros or Scotch Bonnet (25 grams)
  • 250 mls Vegetable or Canola Oil (1 cup)
  • 31/2 tsps Salt
  • 1 tsp Minced Garlic
  • 1 tsp Ground Dry Ginger
  • 5 Bay Leaves
Instructions
  1. Cut chicken laps into 4 pieces each.
  2. Wash tomatoes, peppers and peeled onions. Deseed red and green bell peppers and roughly cut peppers, onions and tomatoes and place in a bowl. Blend in batches (about 3 batches in a regular sized blender) using one third of a cup of water for the first batch and then leaving some of the blend in the goblet for every other batch. Doing this ensures you have as little water as possible in your blend.
  3. Place vegetable oil in a large pot and on medium heat. When hot, pour in the tomato blend and chicken as well as the salt, garlic, ginger and bay leave. Cover the pot and let simmer on medium heat for 50 minutes to 1 hour or until thickened. Taste and adjust seasoning. Turn off the heat and serve with your favorite accompaniment.
