Sweet Potato Pottage
I look back at that time and it seems like a distant memory as i realize how much i have grown! The kind of “grown” that carries “mega” weight!
I realize how much i used to worry and how i now worry less and trust God more because “His eye is on the sparrow….” Know that song by Tanya Blount And Lauryn Hill? It embodies everything i feel right now.
…From months of sitting at home wondering “what next” to one full year of not being able to catch my breath to put up a blog post because “work no gree me see road”! 🙂 I am thankful, so much to be thankful for as i continue to look up to the ever faithful father in heaven!
And while i am being thankful, i am giving a shout out to my subscribers! Thank you! It is because of you that i ran to put up a post as soon as i could catch my breath! That email i receive every couple of days about new subscribers jolts me and reminds me that there are people waiting to read from me. Thank you!
Because i am in the business of food, i am always on the look out for seasonal produce and while we wait expectantly for the new yam, the harvest and yam season, (by the way, this old yam matter has “tired” me, its price and everything else in between and because its so old, you don’t know what to expect until you have cut into it, the only thing that keeps me buying; its sweetness) there seems to be one produce that is available year round at rock bottom price – the sweet potato! With prices ranging from about 100naira to 250naira per kilogram, depending on where you purchase, there is absolutely no reason why we shouldn’t do more with sweet potatoes!
Until i started buying and cooking more of it recently (Hint: the price!), i didn’t realize how versatile this healthy and tasty root vegetable is…. fry it, fry it and sprinkle some lovely seasoning mix, pan or oven roast it, go with the flow or make this simple and delicious Sweet Potato Pottage where the flavour of the sweet potato is king but with the flavour of all other vegetables in the pottage shining through unmasked.

An easy, delicious and flavourful sweet potato pottage recipe

Ingredients
- 2kg Sweet Potatoes
- 2 Large Onions
- 2 Thumbs Fresh Ginger (peeled and pureed or grated)
- 2 Medium Green Pepper
- 2 Medium Tatashe or Red Bell Peppers
- 3 Medium Tomatoes
- ½ Cup Vegetable Oil
- 3 Stock Cubes (4 grams Each)
- 1 teaspoon Salt
- 1 Cup Lightly Seasoned Chicken Stock
- 21/2 Cups Water
- 8 Spring Onions or Scallions (Sliced)
Instructions
- Peel and cut sweet potatoes into 2 inch cubes, rinse thoroughly. Place in a bowl and cover with water while you prep other ingredients
- Peel,and rinse onions then chop or process finely.
- Pour vegetable oil into a large saucepan or pot and place over medium heat. When hot add the chopped onions, cover the pot and allow the onions to soften, stirring from time to time until the onion has a slight brown color (about 8 - 10 minutes)
- Meanwhile deseed green pepper and tatashe then chop finely. Chop tomatoes.
- Once onion browns slightly add ginger and green pepper and fry stirring from time to time for about 3 - 5 minutes until the mix becomes very fragrant. Add chopped tatashe and tomatoes, fry for a further 2 minutes on medium high then stir in sweet potatoes. Add crushed stock cube, salt, chicken stock and water. Stir very well to combine.
- Place a sheet of foil over the pot and put the lid on. Allow to cook for about 30 minutes, stirring at intervals, until the potatoes are soft and cooked through, the liquid thickens and pottage is silky. Stir in the sliced spring onions, take off the heat and serve.
