Sauteed Fluted Pumpkin Leaves with Onions (Ugu)
Happy happy new year everyone! Wishing you all a most fulfilling year ever!
I have been out of my base for a few days and spending time with family so all camera gear, scales, measuring spoons and all what not had to be left behind!
I just couldn’t throw a needle more into our luggage after i had packed clothes, toiletries and the children’s other needs! We were just going for a few days yet i had one large box, a traveling bag and 3 other smaller plastic bags! Its funny how i am never able to pack light! I just keep obsessing about needing this and needing that and then before you know it, i am overloaded! Lol!
I needed to touch base with you and also, share this nice easy Ugu/fluted pumpkin leaves recipe. I hope that my phone camera did it some justice!
Its simple and easy to put together so you aren’t just having rice and stew or yam and stew without throwing in some vegetables into the mix. It also freezes well (that is if the Power Holding Company will allow for those of us in Nigeria!) and still tastes fresh when warmed up probably because the Ugu/pumpkin leaves isn’t allowed to cook for too long on the burner.
It has just 4 ingredients; Vegetable Oil, Onions, Salt and Ugu (fluted pumpkin leaves) and is ready in just a few minutes

Sauteed Fluted Pumpkin Leaves with Onions (Ugu)
Serves: 2
Ingredients
- 2 tablespoons Vegetable Oil
- I medium Onion (Sliced)
- Pinch of Salt
- A bunch of Ugu/Fluted Pumpkin Leaves (About 30 leaves; washed, drained and chopped)
Instructions
- Place a frying pan on medium heat then add vegetable oil. When hot, add onions and saute, stirring frequently for about 1 minute. Stir in a pinch of salt and then add chopped ugu leaves while still stirring for an additional 1 minute. Taste and adjust seasoning and serve warm as a side dish.
