I have always felt pepper soup could be so much more than it is right now and cant wait to try as well as share various pepper soup recipes both here on the blog and at the dinner club :-). Would also be lovely to hear what variations you may be trying out in your kitchen!!!
This got the approval of my dinner club guests so definitely a recipe to share! The only difference between this even though it seems like there is more going on, is the addition of blended oven roasted tomatoes which starts as the base of the pepper soup and with everything else proceeding as you would for regular pepper soup. The meatballs are prepared by adding a little breadcrumbs and eggs into the minced meat with grated onions, salt and chopped effirin/nchanwu then dropped into the pepper soup and cooks in it! Yum yum!
So over the weekend, my mum teased me saying that i was seriously lacking in the music department at the Dinner Club. Kai, i was juggling so many things so i think i had Asa on repeat throughout the dinner sigh! This brought fond memories of my dad; the quintessential DJ at both his own parties and those of others which he gladly did for free, the perfect host! My dad will study the mood of his guests and know exactly what music to play at various intervals. His music collection was unmatched so as i took my mothers teasing to heart, i spent the better part of last night going through my dads collection in search of some good old school african music that i could slot in from time to time at the monthly dinner clubs. I probably got half way through the collection and  decided to continue some other time; it was a gold mine and as i went through record after record, i fought back a tear. Daddy loved his music for sure! May he continue to rest in peace. Saying that he left a legacy is an understatement. We are gradually going to transfer his collection from Records to CD’s.
I decided to share some of the interesting finds from dad’s collection and this is part 1! You wont believe the things i found so get ready for a good laugh and surprises! Hehehe! 🙂

Tomato Pepper Soup with Meatballs
A delicious and satisfying Nigerian soup of tomatoes, peppers, spices and African Basil suitable as a starter or as a main dish when served with Yam, Eko Agidi, Rice or your preferred accompaniment

Ingredients
  • For Soup:
  • 5 Medium Tomatoes
  • 2 tbsp. Vegetable Oil
  • 3 Garlic Cloves (Peeled)
  • ½ of a Small Onion
  • 10 grams Ginger (Grated)
  • 11/2 tbsp Tomato Paste
  • 2 Stock Cubes (About 4 grams each)
  • ½ tsp Salt
  • 21/2 tsp Pepper Soup Spice (Made using groung uziza, ehuru and oliome seeds)
  • 2 tbsp Ground Crayfish Powder
  • ¼ tsp Chili Powder
  • Chopped African Basil/Effirin to Finish
  • For Meatballs:
  • 300 grams Minced Beef
  • 50 grams Breadcrumbs
  • 50 grams Grated onions (About half of a small onion)
  • 1 medium Egg
  • 10 Leaves African Basil/Effirin (Chopped)
  • ½ tsp Salt
Instructions
  1. Preheat Oven to 200°C. Slice tomatoes and drizzle with the vegetable oil. Sprinkle with a pinch of salt and place in one layer on a foiled or lined baking sheet. Place in the oven and roast 30 minutes.
  2. Meanwhile, combine all the ingredients for the meatballs and form into about 36 small ball with the palm of your hands; wetting hands with water from time to make the process easier.
  3. Once tomatoes are roasted, place in the goblet of a food processor with the garlic, onion and about 150 mls water. Blend until smooth and then transfer to a medium pot and add an additional 850 mls water. Place on medium high heat adding grated ginger, tomato paste, stock cubes, salt, pepper soup spice, ground crayfish and chili powder. Bring to a boil and then turn down heat to medium. Carefully drop meatballs in the soup and continue to simmer for about 20 minutes or until meatballs are cooked through. Taste an adjust seasoning and add some chopped African basil/effirin to finish. Serve hot.
